Vinsanto Doc Toscano

Vin Santo del Chianti of Ruffino, produced by drying on Trebbiano and Malvasia racks in the evocative “vinsantaia” of Gretole.

Vin santo is a typical dessert wine, and its perfect match is with the ''cantucci'' of Prato.

The bunches from which vin santo originates are made wither very slowly in vinsantaia, selected and vinified in the first days of December.

The pressing of the withered bunches was carried out with delicate and long cycles. The must thus obtained, dense due to the high concentration of sugars, was transferred to 225 liter oak barrels and fermented in a thermo-conditioned environment at 18°C.

Once the right balance between alcohol and residual sugars was reached around mid-January, fermentation was interrupted.

After decanting, the vinsanto was decanted into oak barrels where it remained refine for 3 years about.
